I dyed my hair red 3 weeks ago, but I want to go back to blonde. If I dyed it medium brown in a few weeks, could i dye my hair blonde again a few weeks after that? Or will the red underneath the brown make it turn out orange? :(

I'd say your best bet is to remove the red first as dying it brown first wont make it any easier to go back to blonde. I've been in this situation so many times myself lol :)

Dying it brown first will help if you choose an ASH brown. It must must say ash on the box. Ash will drastically neutralize red/gold tones. I guess it depends on how red you went as to whether or not you'll have to dump an ash color on it more than once.
That being said, you will likely have to bleach it to get back to blonde. If you start with brown hair, the bleach will make your hair color go through various stages as it lightens. It WILL turn orange regardless of whether or not you had dyed it red. Then it goes to yellow, and only then does it go to a platinum white. That is simply how bleach functions.

The problem with box color is it is just so damn hard to get out. Even of you put the brunette over top, red will still live underneath.

I would suggest doing some soak caps to remove as much red as possible. I've went from red to blonde many times and each time it's harder to get back to the blonde. Red hair dye fades the fastest but somehow stick to the hair the longest it's so weird so some soak caps to pull out as much of the hair dye as you can and then get a full highlight to start the process though be prepared for yellow orange hair for awhile! Salon would be best ask for a corrective color treatment but be ready to spend serious $$$$ it's a long process for the colorist and you!

What's a soap cap and where do you get them?

Soap cap is a hairdressing term. Washing your hair with bleach powder and shampoo. Very drying.
