Sulphates actually dry your hair out, makes your hair tangle easier, frizzy and splits the hair due to the drying factor. It can also cause irritated, dry, flaky scalp.

I heard that there is different kinds of sulphats and that some are really really bad and some are not so bad - I don't know much more about it. But I would google sulphates and see if there might be a chart or something that shows the different kinds!

Shampoos with sulfate aren't necessarily bad for everyone, especially for those with oily, non-sensitive scalps. They help make shampoos lather better, and are known for their ability to remove oils very well. For that reason prolonged use of sulfates, particularly SLS, can lead to a dry and irritated scalp. I avoid them because they strip hair color fast. But there are no studies that find they lead to cancer or anything like that if you're worried about safety. There are many different kinds of sulfate as Sabrina said and some are more gentle.

I also feel they are more important to avoid in skincare products.
