Redken is amazing, no doubt!
But my go to shampoo and conditioner right now is the Dove oxygen moisture!
I have very fine hair but I have a lot of hair, I was lacking volume but didn't want to use something that wasn't going to give me a lot of moisture as well! I was really sceptical about this shampoo, but honestly it does exactly what it promises! Volume and moisture!

I do think Dove contains sulfate but I don't know about perfume! I have only used sulfate free while I visited new york, I bought the everStrong from loreal, it was super nice, but I am not paying the 125 kr it coast in Denmark! It's ridiculous!

I don't know if it's sulfate free but you can try Paul Mitchell's tea tree shampoo and conditioner. It has peppermint in it and when you put it on your scalp feels really clean and tingles. They also have a thickening shampoo and conditioner.

I normally use Organix (known as Org know I think?) Cherry blossom shampoo and it doesn't weigh my hair down or dry it out either. With it being sulfate free, I don't notice any excessive buildup. I don't like it's matching conditioner though.
I know you were saying that you didn't want a shampoo with sulfate but the Neutrogena Anti Residue shampoo works the best from all the clarifying shampoo I have tried. I use it once a week or every two weeks and it keeps my hair from getting buildup. I do use a mask on my ends after using it to prevent any dryness. My hair feels the best after using it, darn shame it's just a weekly treatment.
I don't use conditioner much, just masks on my ends. My favorite is the color technician fekkai mask for moisture and for protien I like Redkens extreme length primer.

The entire aveno brand is amazing! I didn't know they had shampoo and conditioner until I stumbled upon it by accident. My sister, mom and I all have VERY different hair. Mine I long straight thick and combination. My sisters is really long curly and dry. My moms is shorts thin and oily. The shampoo and conditioner works perfect for all of us! It's sulfate and perfume free and makes you're hair so smooth.
