Beauty Detox: Gluten-Free Grains

Looking for the perfect lunch or side dish? Celebrity nutritionist Kimberly Snyder's recipe for Greek-inspired millet salad is a great way to get a healthy dose of vitamins and minerals and it’s a healthy carbohydrate—which works to keep you full for longer—so you don’t fill up on unhealthy snacks! “Millet is a whole, gluten-free grain that is extremely beautifying," says Kim. "It's packed with B vitamins—which are great for healthy hair—vitamins E and K, and a good amount of plant protein.” While too much protein can make you put on weight, millet contains the perfect amount to help your brain function properly, and enough carbohydrates to fill you up. Because it's a whole grain, it's a slow releasing energy food—meaning you will receive slow bursts of energy throughout the day rather than one hit. It's also full of nutrients essential for a healthy body and contains beauty minerals such as calcium, iron, magnesium, zinc and copper, essential fatty acids, and fiber. "It's definitely worth bringing into your repertoire of lunch and dinner recipes, and switching it up from our other whole grain friend, quinoa," says Kim.
Greek-Inspired Millet Salad
Ingredients:
- 6 cups water
- 2 cups dry millet
- 1/3 cup pitted and chopped Kalamata olives
- 1/3 cup drained capers
- ¼ cup minced scallions
Dressing:
- 2 Tbsp fresh lemon juice
- 1 Tbsp Dijon mustard
- 2 Tbsp raw apple cider vinegar
- High quality sea salt, to taste
DIRECTIONS
Be sure to soak the millet overnight in water and rinse well before using.
In a saucepan over high heat, bring the water to a boil. Reduce the heat, then add the millet and simmer for around 15 to 20 minutes or until it has cooked to a softer texture. Pour the millet through a strainer and set it to the side to cool down.
Blend all the dressing ingredients together until smooth in a blender, or simply add them to a small bowl and whisk well with a fork. Add the millet to a large mixing bowl, then pour the dressing on top, and add the olives, capers, and scallions. Mix well and enjoy your delicious meal!
