Beauty Detox: Skin Brightening Soup

We all love to indulge in comfort food during the cold winter months, but after too many holiday parties and long lunches, heavy meals can start to take a toll on your body. Instead of indulging in spaghetti or potatoes, why not get your fill from soup? This week, celebrity nutritionist Kimberly Snyder gives us the perfect cold weather indulgence, raw red pepper and tomato soup, a meal that will not only warm you up but also keep your skin looking vibrant during the winter months. “Red peppers are extremely high in vitamin C,” says Kim. “If you eat them roasted or cooked, however, most or all of the vitamin C has been destroyed, so you miss out on the collagen-repairing beauty vitamins. In this recipe you’ll eat your peppers raw to preserve all of the beneficial vitamins. Tomatoes, another red ingredient in this soup, derive their color from lycopene, an antioxidant that helps flush the body of aging free radicals.” And besides the good-for-you qualities? This soup is super easy to make—so it’s perfect after a long day at the office or holiday shopping!
Raw Red Pepper and Tomato Soup
Ingredients

1 organic red pepper, cored, seeded, and chopped

3 medium-sized organic, vine-ripened tomatoes

½ organic celery stalk

1 cup unsweetened almond milk

¼ cup chopped sweet onion

1 Tbsp nutritional yeast

¾ tsp Celtic or Himalayan sea salt

1 very small garlic clove
-
1 Tbsp fresh lemon juice
Directions
Blend everything in a blender until smooth, then serve.
